cacio e pepe flatbread
have you ever made cacio e pepe pasta? it's the ultimate quick but delicious meal - cacio e pepe literally means "cheese and pepper," and the pasta is just butter or olive oil, cheese (like parmesan or pecorino), and pepper. so simple, so good.
i love the flavors of this dish, so i wanted to make a flatbread with the same flavors to go alongside dinner. and just like the pasta, it was just plain tasty. this is a perfect complement to so many meals, or as a light meal on its own!
you'll need:
1 pizza dough (homemade or store-bought)
2 to 4 tblspn. olive oil
1/2 to 1 cup pecorino cheese, grated
lots of freshly ground black pepper
preheat oven to 350.
roll out pizza dough on a floured surface until the dough is thin and even. brush entire dough with olive oil (amount will depend on the size of your dough - just make sure it's all thinly coated). sprinkle pecorino over top. then, go to town with the black pepper - you gotta get the "pepe" part of this dish to really shine.
bake in oven for 25-30 minutes, or until edges are golden brown.
