chipotle pepper jack scones


well goodness gracious. these were yummy.

i'm a huge fan of savory scones (like these), and these were no exception. they have the perfect amount of heat, and with a little honey drizzled on top... well, they're just divine.

chipotle pepper jack scones
makes 10 scones

you'll need:

2 1/3 cups all-purpose flour
1 teaspoon black pepper
1 tablespoon chipotle salsa (found in the latin foods aisle right next to the chipotle peppers in adobo sauce)
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon seasoned salt, like Lawry's (you can use regular salt, this just adds a little something extra)
1 stick unsalted butter, chilled and cut into small cubes
2 cups pepper jack cheese, shredded
1 1/4 cup milk (i used skim)
1 egg

preheat oven to 400F. line a baking sheet with parchment paper.

in a large bowl, whisk together flour, pepper, chipotle salsa, sugar, baking powder, and salt. using your hands or an electric mixer, add it butter and combine until the mixture is coarse and crumbly. add in pepper jack and stir until evenly combined.

in a small bowl, whisk together milk and egg. add it to the flour mixture and stir until just combined (do not over mix!)

use an ice cream scoop or your hands to roll the dough into 10 balls (wet hands with water to prevent dough from sticking to you!). place balls about 2 inches apart on baking sheet and press down to a cylinder about 1/2 inch thick.

bake for 20-25 minutes, or until scones are golden brown on top. remove from oven and allow to cool slightly. enjoy, loves!
