honey + beer turkey chili


happy friday friends! how about some chili for your weekend?

in college, my sorority hosted a chili cook-off every fall, and one year my girlfriends and i made a turkey and beer chili. i'm not sure where that recipe is today (if we even had a recipe?), but it was so delicious that i decided to figure out one for myself. yum. YUM. it's thick, spicy, slightly sweet from the honey, and just all-around dang good.

here's what you'll need:
1 tblspn olive oil
1 diced onion
3 cloves garlic, minced
1 lb. ground turkey breast
1 1/2 bottles beer (i used shiner)
1/4 cup honey (i am obsessed with this honey that i picked up at the farmer's market last weekend)
1 28oz. can crushed tomatoes
1 6oz. can tomato paste
1 4.5oz. can diced green chiles
2 tblspn chili powder
1.5 tsp cumin
1.5 tsp cayenne
1 16oz. can black beans, rinsed and drained
1 16oz. can kidney beans, rinsed and drained
whatever you want to top it with! i just sprinkled diced onion and cheddar, but you could add jalapenos, chives, tortilla chips, fritos, etc.


in a large soup pot, heat olive oil over medium heat. add onions and saute for 3 minutes. add garlic and saute 1 min. add the turkey and cook through, mixing and breaking apart the meat - should take about 8-10 minutes.

next, add the honey, crushed tomatoes, tomato paste, chiles, chili powder, cumin, cayenne, and 1 bottle of beer to the pot. stir to mix thoroughly and allow to simmer for about 30 minutes.

next, add the extra 1/2 bottle of beer. sip on the leftover 1/2 while you let the chili simmer for 20 more minutes.

now add the black & kidneys beans, stir them in, and let it simmer for another 20 minutes.

...and you're done! serve with whatever toppings make you happy and enjoy! xx
