slow cooker balsamic roast beef



happy friday, dears! ok, so this roast beef. i can't even talk about it. this is truly delicious meat, and it took me probably less 3 minutes total to prepare. it sat in my slow cooker while i ran around all day, and then was nice and ready for me to shred, serve, and devour.

i adapted this recipe, and it was just ridiculously good. it's that simple. so, here's what you'll need:

3 lb. boneless chuck roast
1 cup beef broth
1/2 cup balsamic vinegar
1 tblspn. worcestershire sauce
1 tblspn. soy sauce
1 tblspn. honey
1/2 tspn. red pepper flakes
5 garlic cloves, chopped
1 small onion, chopped

place beef in your slow cooker. combine all of the other ingredients in a bowl. pour over the beef and cook in slow cooker: 4 hours on high or 6-8 hours on low.

when finished cooking, remove the beef and place it on a serving dish. shred it with 2 forks and pour 1/2 cup of the leftover sauce over the top (KEEP the leftover gravy in the refrigerator or freezer! this will be fabulous for another use).

that's seriously it. now, if you're like us and only have 2 mouths (and a begging dog) to feed, 3 lbs. might seems like a lot. and it is. but i promise, promise, promise that you'll want leftovers of this. and it freezes well! so let's just agree that you need to make this sometime this weekend. have a great one, loves. xx
