rosemary salmon + avocado pasta


friends, how about an ultra-healthy meal during the holiday season? these are simple dishes that'll be ready in no time (the entire thing comes together in about 20 minutes), leave you happy and satisfied, and will give you that i-was-good-tonight feeling that we so rarely get during this time of year. :)

let's talk first about the pasta...this is one of my all-time favorite pinterest finds, and i've made it time and time again. i've adapted it a bit to go with the simplest, most delicious roasted salmon. here's what you'll need for this yummy feel-good meal:

for the pasta:
1 avocado, pitted and peeled
juice of 1/2 lime
2 garlic cloves
1/2 jalapeño
1/2 cup basil
1 cup spinach
1 tsp. salt
1/2 tsp. pepper
2 tblspn. olive oil
1 lb. whole wheat pasta (we like fettuccine, but use whatever you like!)

for the salmon:
2 salmon pieces (6-8 oz. each. this serves 2 people, but if you're cooking for more, just adjust the quantities as needed!)
2 tblspn. olive oil
1/4 tsp. salt
1/4 tsp. pepper
1/2 tblspn. rosemary
juice of 1 lemon

preheat oven to 400. place salmon on a foil-lined baking sheet. drizzle 1 tblspn. of olive oil over each piece and season with the salt, pepper, and rosemary. squeeze lemon juice over each piece. roast in oven for 10 minutes, or until fish is just cooked through.

bring a large, well-salted pot of water to a boil. add the pasta and cook according to package directions. when draining, reserve 1 cup of pasta water for the avocado sauce.

while pasta and salmon are cooking, make the avocado sauce. place avocado, lime juice, garlic cloves, jalapeño, basil, spinach, salt, pepper, and olive oil into a food processor or blender and blend until completely smooth.

pour sauce over cooked pasta, adding the reserved pasta water as needed to thin out the sauce. serve alongside salmon.
