greek lamb naan pizzas


Happy Monday, friends! How was your weekend? I'm heading back to school today after a glorious Christmas break. While I'm not relishing waking up early again, I am always glad to settle back into more of a routine. And since one of my intentions for 2014 is to become more organized, I kinda need to be busier to put myself to the test. :)

Another goal I have for this year is to try to plan our meals for the week. Do you do this? I never have, but rumor has it that it saves time and money, so I thought I'd give it a go. If you're a meal planner, I'd love to hear any tips or tricks you have!!

One of my go-to meals that will definitely show up in our planning is naan pizzas! I love them because they take no time at all to make (it's really more assembling than cooking!), you can top them with whatever you want, and most of all because they're super yummy.

Since Miles and I are crazy about Greek flavors, we absolutely loved these! They were fast, fresh, and flavorful... perfect for a weeknight dinner!

Greek Lamb Naan Pizzas
makes 4 pizzas

you'll need:
4 naan breads
olive oil
1/2 cups tomato puree (like Pomi)
1/2 lb. ground lamb
1 cup shredded mozzarella
1/2 small red onion, thinly sliced
1/2 cup Kalamata olives, halved
1/2 cup sundried tomatoes, chopped
1 English cucumber, seeded and sliced
1/2 cup crumbled feta

Preheat oven to 400 degrees F. If using a pizza stone, place it inside the oven to preheat.

While the oven is preheating, heat a bit of olive oil in a skillet over medium-high heat. Cook lamb until completely done, breaking up the meat as it cooks. Transfer to a paper towel-lined plate and set aside.

Lightly brush naan with olive oil. Once the oven is preheated, place the breads on the pizza stone or baking sheet and bake for 5 minutes. Remove from the oven. Spread about 2 tablespoons tomato puree over each pizza. Divide the lamb, mozzarella, onion, olives, and sundried tomatoes evenly over each pizza. Return to the oven and bake for 10 more minutes, until cheese is bubbly.

Remove pizzas from the oven and top with cucumbers and feta. Enjoy!

  1. I simply love, love this idea Marie. Fresh and delicious flavors, so perfect for a quick weeknight meal. I wish I was more organized, I try to be! Usually I'm able to plan 2-3 meals a week but no more, life usually gets in the way!

  2. OMG these sound fabulous! I LOVE Greek food and I am in love! I made my own home made naan bread and this would be excellent on it! Though ground lamb can be hard to find at the store.

  3. I don't know what took me so long to make naan pizza but we did it not long ago and made chicken pesto as well as chicken sausage with tomato sauce versions. So delish and couldn't be easier. I adore the fresh flavors of your Greek spin.
    As for menu planning, I've taken to jotting down dinner ideas for the week - it just helps me get a grasp and not to forget. It gets changed up but it helps me stay a little more organized. : )

  4. It's breakfast time here and I want this pizza for breakfast! I'm usually not a meal planner, but on the occasions when I have been organised enough to plan ahead, I feel like Super Woman.

  5. Ooh this looks yummy! And yes, I am definitely a meal planner. My mom planned our meals out for a month at a time so I grew up around the idea of planning meals. :) I'm not really sure what tips to offer. I usually just pull up my Pinterest "Food To Make" board and pick a few things to make for the week. :)

  7. this sounds like a perfect weeknight meal. I do not really plan my meals day to day but before I go grocery shopping I have recipes on my mind for the week and will buy ingredients/groceries based on that. There are free printable you can get online if you like strict meal planning. Also, where do you guys buy ground lamb in Dallas?

  10. This looks so good! I love this easy way of making pizza. I'd bake/grill the feta along with the pizza though: warm, melted feta has so much for flavour than cold. Let's see if I can get my family off their diets for this! :) (and otherwise there'll just be more for me, right?)

    1. Haha, right! Agree about the feta -- my husband doesn't like the texture of it baked, so I sprinkled it on at the end and it came to about room temp. Either way, it's feta, so LOVE it!!
