salty caramel chocolate shortbread ice cream sandwiches

Hi there, friends! We're enjoying a warm, sunny weekend here in Dallas, and if that's not an excuse to celebrate with ice cream sandwiches, I don't know what is. These little treats are so tasty - chocolatey and caramely and salty. But what put them over the top for me is how dang cute they are.

My shipment from Walker's this month included these adorable little scottie dog cookies, and I immediately knew I wanted to use them. They're fantastic chocolate shortbread with little chunks of chocolate throughout... YUM.

The richness of the cookies along with the salty caramel ice cream of top is just heavenly. It's time for ice cream sandwiches, people!

Salty Caramel Chocolate Cookie Ice Cream Sandwiches
makes 8 sandwiches

you'll need:
2 packages Walker's Chocolate Scottie Dogs Shortbread
1 pint caramel gelato or ice cream
coarse sea salt, for sprinkling

Arrange half of the cookies, bottom side up, on a cookie sheet. Place a small scoop of ice cream (about 1 tablespoon) into the center of the cookies. Top each scoop of ice cream with 1 or 2 sea salt flakes. Press remaining cookies onto the ice cream. Place in freezer for at least 2 hours before serving.

Sandwiches can be wrapped individually in plastic wrap and kept for up to a week.
