buffalo chicken baked potatoes


potatoes? i love, love, love them so. but of all the ways i make them - mashed, fried, roasted - i hardly ever make baked potatoes for our dinner. but after this meal, i think that's definitely going to change. this was like, comfort food to the max. i'm always okay with that.

buffalo chicken baked potatoes
serves 2

you'll need:
2 slices bacon
2 baking potatoes
olive oil
salt
1 cup cooked chicken breast, shredded (i used leftover rotisserie chicken)
1/4 cup buffalo wing sauce (i use frank's), plus more for drizzling
2 tablespoons ranch dressing
about 3 oz. crumbled blue cheese
2 green onions, chopped

preheat oven to 400F. cook bacon on a foil-lined baking sheet for 15-20 minutes. when cooled, chop bacon into small pieces.

now crank up the oven to 450F. pierce each potato 3 times, then rub in plenty of olive oil and salt. place on a baking sheet. bake for 1 hour.

in a medium size bowl, pour the 1/4 cup buffalo sauce over the shredded chicken and toss to coat.

when potatoes are done, remove from oven and allow to cool for a few minutes. cut them open and pile on chicken, bacon, and blue cheese. drizzle each potato with ranch dressing and more buffalo sauce as desired. garnish with green onions... and ENJOY!
