tzatziki biscuits



if you know me at all, you know i am obsessed with biscuits. i really think they're just the perfect food, and would take a really good biscuit over some kind of dessert any day. i love them. LOVE.

so what i am about to say to you is not taken lightly: i think these might the best biscuits i have ever eaten.

boom.

they're anything but traditional. if you're a purist and like your biscuits buttermilk-y and cheesy, just trust me here. i am like you. but these really are a DREAM. they're incredibly light and fluffy. the tzatziki gives it an amazing tang.

you don't even need a mixer for these. they take no time to throw together. so you have no excuse. make. these. immediately.

tzatziki biscuits
makes 8 biscuits

you'll need:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon sea salt
1 1/2 sticks butter, cold and grated or cut into small cubes
1 cup tzatziki (i just used store-bought, but you can make it at home)
2 eggs

preheat oven to 400F.

in a large bowl, mix together flour, baking powder, baking soda, and salt. add in butter and put bowl into the freezer for about 10 minutes. remove from freezer and, using your hands, break up the butter until it's the size of small peas in the flour.

mix together tzatziki and 1 egg and add to flour mixture, mixing until just combined (do not over mix). knead the dough into one solid ball. using your hands or an ice-cream scoop, roll pieces of dough into a ball and put on a parchment-paper lined baking sheet. press balls of dough with hands to about 1-inch thickness.

create an egg wash by beating the other egg and 1 tablespoon of water. brush egg wash on top of biscuits. bake for 15-20 minutes, until biscuits are light golden brown on top.

  1. Mmmmmmm... these look de.lish. Tzatziki, an interesting ingredient, I can see how it would give them a tender crumb.

    1. Thank you! They were sooo very light, which I have to confess has not always been the case when I've made biscuits! This is my new secret weapon!
