ruby red grapefruit cookies


Okay, these cookies. I wish you could taste one right now! I know they look like regular old sugar cookies, but these are so lovely. We've been getting the best grapefruits in our CSA box lately, so when I found this recipe I thought I'd give it a try to use some of them up. I had no idea how good these would turn out! They have a slightly crispy exterior, the most tender, chewy interior, and a perfect hint of grapefruit goodness.

These are delicate, pretty little things. I'd make them for a ladies' brunch or a wedding shower. Or for anyone you'd like to convince that you are the best cookie baker in all the land.

Ruby Red Grapefruit Cookies (from Homesick Texan)
yields 2 dozen cookies

you'll need:
1 1/2 cups sugar, plus more for dipping
1/2 cup (1 stick) butter, softened
1 large egg, beaten
1 teaspoon vanilla extract
2 tablespoons Ruby Red grapefruit juice
1 tablespoon Ruby Red grapefruit zest
2 cups all-purpose flour
2 teaspoons baking powder
1/2 ground cinnamon
1/4 teaspoon kosher salt
pinch of ground ginger

Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper and set aside.

Beat the sugar and butter in a stand mixer fitted with a paddle attachment until fluffy, 3-5 minutes. Stir in the egg, vanilla, grapefruit juice, and zest until well-combined. Whisk together the flour, baking powder, cinnamon, salt, and ginger. Add the dry ingredients to the bowl and stir until a soft dough is formed.

Pour some sugar into a bowl. Form the dough into tablespoon-sized balls. Dip each ball into the sugar and place on the baking sheet at least 2-inches apart. Bake 10-12 minutes. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely, or until you can't resist stealing one away.

  3. It seems weird to use grapefruit in a cookie, but then again other citrus fruits are used all the time in baking! I will definitely try this! I'm always intrigued by different flavor profiles :)
